To destroy the enemies food stash, just do a suicide run with bumblebee, or place termites turrets inside their base so the enemy keeps getting...

I think it's just random, sometimes I get 1-2 star missions. But I agree that even the 4 star missions are extremely hard.
A quick tip- if there is an unbelievably hard mission, fail it 3 times and it will become easier. If it's still too hard, you can fail it another...
