Those are no where close to any of the really GREAT iPhone games (except for GTA and Space Miner). You really need to have: Spider: Secret of Bryce Manor Zen Bound Eliss Labyrinth 2 Canabalt Jet Car Stunts and of course: Enviro-Bear 2010!!! Those are actually really good games, unlike some of the things on your list like "Crash Course."
You could always start by browsing TA's highest-rated games. In the menu on the right of the main page you can click to see five-star game reviews, etc. IGN also has a list of their top iPhone games which you could probably find with a quick search. There are similar lists on some other app-review sites, too. There are a lot of great games out there, and a lot of opinions. No easy answers to your question. But then, that's a good thing, I guess.

These are all based on your personal opinions. The only games that are even decent on that list are Grand Theft Auto: Chinatown Wars and Chaos Rings.
Now that 'Edge' is back on the App store, I would have voted for that. But since all the games (except GTA and Space Miner) aren't very good...
