    Absolute must haves:

    SBSettings
    OpenSSH
    Categories
    Winterboard
    SpotBright

    + whatever theme changes you would like to make to the appearance of you iPod Touch

    By the way, you don't have to restart your device to get big new games when you're jailbroken. SBSettings (must have Cydia app) has a button that frees up your memory, which is what you restarted for in the first place in unjailbroken devices.

    Also, since I'm already posting, Backgrounder, Five Icon Dock, Flashlight (better than appstore ones, it automatically turns brightness on to max), MxTube, and SBSettings are the must have Cydia apps, a lot of people like Winterboard. I personally like Lockdown a lot.

    There are also quite a bit paid Cydia apps that are quite good. Overboard is excellent, CategoriesSB makes your categories run a lot faster, and of course the emulators :)

    If you use OpenSSH, don't forget to change the default password of the device.

    i have filled my pages with apps of all kinds!! thanks, midianGTX, i think ill use your alphabetic order arrangement... but so mny apps!

    Same here.

    I put all the apps I use most often on the first page, and the only stock apps I have on the first page are Photos, Maps, Settings, and Notes.

    I actually don't do that anymore, since I got CategoriesSB and can't figure out if it's possible to rearrange my apps.

    I keep most of the default apps on the front page (though I removed the default texting app, the default note app, the default camera app and the stocks app), and also keep TextFree and iFile on the main page.

    On my second page, I have everything organized into folders based on category and game genre.

    For my dock, I have the phone app, ipod, the default mail app, Cycorder, and my Twitter app (using five icon dock app, or course).
